I’m not a big meat eater. I don’t like beef and I don’t eat pork. I’m a chicken and fish type of chick but I’m surrounded by vegetarians and vegans. Each of them has chosen that path for whatever reason but all are great advocates for the cause and so am I.
Every Monday on my nonprofit’s Facebook page, we support the Meatless Monday campaign. I wholeheartedly believe that a person’s reduction in the take of meats is a healthy choice even if it’s just one day per week.
So I thought it would make sense for me to start my own journey toward vegetarianism but what I didn’t do was my research (which was odd for me). I thought because I only eat chicken and fish that the transition would be easy. What I’ve learned though is eating meats of any kind is a habit, and habits sometimes are hard to break.
So I went back to square one and did my due diligence. I read and talked to more people about their transition. I’ve learned that you still have think about your food choices and be smart about portion control. I’ve realized this is the right health choice for me and that I have to take advantage of the resources at the library, online and through my friends.
Eating fresh salads has been the easiest part of the transition. My biggest obstacle is that…wait for it….
Wait for it…
I hate to cook. I don’t like anything about a kitchen.
But, because I value my health and I really want to make this work, I have learned to like some aspect of cooking. The Meatless Monday website has great recipes which I’m going to try and yes, cook. I’m finding that I really like carrots, raw and cooked. I ate a veggie plate of well seasoned broccoli at a restaurant recently and was very satisfied. I’ve also fallen in love with the veggie nachos at Qdoba.
It’s so possible. Vegetarianism will be a part of my health journey!

I am right there with you. i’m not a big beef eater and I’m not a chicken fan either. So when my husband said to me a few days ago, lets try to go meatless I was all in. I did research my meals and planned some great ones. So far we had omlets on Monday and tonight was a ramen noodle with veggies saute. Both excellent and I didn’t miss the meat at all. Keep up the good work and I will have to check out your website for some recipes.

I went to the Meatless Monday site some time ago (based on a tweet you had posted on @CWUW) and I found some good recipes there too. I am going to try a recipe for the quesidillas this weekend. I’m not ready to go vegetarian, but as you said, one day a week is a start.
I won’t be going vegetarian- I love fish and I love a good steak and I love having some meat in soups or using meat based stocks in cooking. I did do the vegetarian thing for about a year a while back but I still wasn’t making healthy choices so I ended up gaining 15 pounds.
However, the majority of my diet is still veggies and fruits. Cottage cheese, grapefruit, kiwi, oranges, strawberries- my typical morning diet. Fish or chicken Lean Cuisine for lunch. Afternoon and evenings consist primarily of an assortment of veggies. I never intended to go full on veggies- but I am a big fan of eating living food that grows!
I love me a big ol’ steak! But one reason that I try to plan a meatless dinner once a month is to save pennies. And if it’s healthier for me in the process, well that’s a two-for-one deal. Thanks for the Meatless Monday links!
Its still a journey for me. I don’t mind being a “flexitarian” but I wanted to see how I would approach this lifestyle.
